scripts: Put matter configuration with 7001 to quarantine

Matter configuration for 7001 was wrong from a long time,
as wrong board name was used. AFter fixing the names
it turned out that 7001 gets huge flash overflow.
For now it was put to quarantine, until solution is
found or support dropped.
